Peach Muffins
1 ½ cups of whole wheat or spelt flour
¼ tablespoon baking powder
¼ teaspoon baking soda
pinch of salt
¼ cup sugar
1 egg
½ cup goat’s milk
½ plain non-fat yogurt
1 ½ teaspoon canola oil
½ cup peeled, pitted, chopped fresh peaches (or drained canned peaches)
3 tablespoons chopped pistachios
- Combine flour, baking powder, baking soda and all dry ingredients in a large bowl.
- In a separate bowl, combine egg, milk, yogurt, and oil. Gradually add in dry ingredients to wet ingredients, mixing till moist.
- Fold in fruit and nuts
- Pour batter into lightly greased mini muffin tin. Bake at 350F for 20 min or until toothpick comes out clean.
- Makes 10 muffins
