Peach Muffins

1 ½ cups of whole wheat or spelt flour
¼ tablespoon baking powder
¼ teaspoon baking soda
pinch of salt
¼ cup sugar
1 egg
½ cup goat’s milk
½ plain non-fat yogurt
1 ½ teaspoon canola oil
½ cup peeled, pitted, chopped fresh peaches (or drained canned peaches)
3 tablespoons chopped pistachios

  1. Combine flour, baking powder, baking soda and all dry ingredients in a large bowl.
  2. In a separate bowl, combine egg, milk, yogurt, and oil. Gradually add in dry ingredients to wet ingredients, mixing till moist.
  3. Fold in fruit and nuts
  4. Pour batter into lightly greased mini muffin tin. Bake at 350F for 20 min or until toothpick comes out clean.
  5. Makes 10 muffins
